I’m Baaaaaaack

I decided to keep Tumblr as my main platform and continue to post up here. I will be back on updating and promoting soon. I had to get things in order with work and school and all of that.  I am working full time and I have a side business going so I am busy around the clock. I am doing my best to keep everything afloat.  Please don’t mind the mess, everything is still under construction.


HOLD TIGHT READERS. I have so many posts to prepare and put on a schedule. I am still debating changing over platforms to make things more clean-cut for this blog. I have been busy; was searching for a new occupation and I have acquired a new job so now I can focus on working and dedicate time to the blog and save up for new material. Monday Night Dinner: Chicken Tequila Burgers

Decided to make these for dinner Monday night.

Here’s the recipe [source - Pink Parsley]:

Chicken Tequila Burgers
adapted from Annie’s Eats, originally from Cara’s Cravings

  • 2 cloves garlic, chopped
  • 1 jalapeno, seeds and ribs removed, roughly chopped
  • 2 boneless skinless chicken breasts (about 1 lb total)
  • 1/4 cup cilantro
  • zest of 1 lime
  • juice of 1 lime
  • 1-1 1/2 ounces tequila
  • Dash of soy sauce
  • kosher salt and ground black pepper
  • 1/3-1/2 cup panko
To serve:
  • burger buns
  • sauteed peppers and onions
  • cilantro-lime ketchup (ketchup + 1 Tablespoon chopped cilantro + juice of half a lime)
Process the garlic, cilantro, and jalapeno in the food processor until finely chopped.

Cut the chicken breasts into chunks, and add to the food processor.  Add the lime zest and juice, tequila, soy sauce, panko, salt, and pepper.  Pulse until the chicken is uniformly ground and all the ingredients are well mixed.

Form into 3-4 patties.

Prepare grill, and grill 5-7 minutes per side, or until burgers are cooked through.  Serve with desired toppings.

I served it with cilantro-lime ketchup.

It was sooo delicious and a gorgeous green color!

Panera Bread’s Green Tea… It is soooo awesome! Why do I have to live down the street from it?!

Quick Bite: Shane’s Rib Shack

Whenever the opportunity arises to hop on getting some barbecue, my housemate and I are on it!  So we went to Shane’s Rib Shack to pick up our “Big Dad” sandwiches and awesome fries.  I make my usual pink lemonade Arnold Palmer mix to accompany my meal.  I am still getting used to their house sauce but their food is always a good choice.

Quick Bite: Free Doughnut Day

I was as happy as a kid on Christmas morning when I got my raspberry filled doughnut from Krispy Kreme on “free doughnut day”.  I was so excited that I went to the other location in town with my friend to get a lemon filled one later that day!

Culinary Bite: French Toast with Fresh Fruit

I made french toast made with cinnamon sugar, nutmeg, all spice, and almond milk. Topped with powdered sugar, sliced bananas, blackberries with a honey dizzle and butter.  It was an awesome late brunch.
